The table above ranks the main processors by their current base quote for steers and heifers, highest first. Quotes usually sit within a few cent of each other, but the gap between best and worst is real money on a full load. Base quotes are before bonuses — always confirm the full spec in writing.
In a typical week the highest and lowest base quotes are within about 4–10c/kg. On a 400kg carcass, 10c/kg is about €40 a head — several hundred euro across a load. The bigger variation is usually in the bonus structure, not the base quote.
