📋 What the Grades Mean on Your Kill Sheet

Irish cattle are graded using the EUROP system — one letter for conformation and one number for fat score. Factory base prices are quoted at R3. Your payment goes up or down from there.

GradeWhat it meansEffect on price
EExcellent conformation+15–25c/kg above base
UVery good conformation+8–15c/kg above base
RGood conformation (base grade)Base price
OFair conformation−5–10c/kg below base
PPoor conformation−15c/kg or more
Fat 2Low fat cover−5–10c/kg
Fat 3Average fat cover (base)Base price
Fat 4LSlightly over-fat−5c/kg
Fat 4H / 5Over-fat−15c/kg or more

Most QA-certified farms (Bord Bia Quality Assurance) receive an additional 10–15c/kg on top of base. Not QA certified? Use our free digital audit book to prepare.
